QUICK & EASY WEEK NIGHT DINNER - Broccoli & Chicken Casserole
I do not usually make casseroles, mostly because of texture, but my husband loves them. I have been trying to find something that is easy, quick, and that we both enjoy. This casserole hits the mark on all three.
QUICK & EASY Broccoli & Chicken Casserole
HERE IS WHAT YOU NEED: Cream of chicken, long grain white rice, chicken breast, broccoli, mozzarella cheese, parmesan cheese, Italian bread crumbs, onion powder, garlic powder, water, salt + pepper
WHY THIS WORKS DURING THE WEEK: Although this take 45 minutes to cook, it takes seconds to throw together. You could also make this ahead of time and reheat individual portions. Casseroles also freeze well
LET'S GET COOKING: Add chopped broccoli, soup, water, rice, onion powder, garlic powder, parmesan cheese to a 9x13 casserole dish and stir. Season with salt + pepper. Lay chicken breasts on top of mixture. Season chicken with salt & pepper. Sprinkle Italian bread crumbs on top of casserole. Cover with foil. Cook at 375 degrees for 45 minutes. Remove and add sliced mozzarella, recover with foil, and place back in oven for 5-8 minutes. Enjoy.
QUICK & EASY WEEKNIGHT DINNER - Broccoli & Chicken Casserole
1 can cream of chicken soup
1 cup water
2 cup chopped broccoli
3/4 cup long grain white rice
1/4 cup grated Parmesan cheese
1 tbs onion powder
1 tbs garlic powder
3-4 raw skinless chicken breasts
1/2 cup Italian bread crumbs
3 oz mozzarella cheese (one round ball, sliced)
Salt + pepper to taste
Preheat oven to 375 degrees.
Add soup, water, rice, broccoli, 1/2 onion powder, 1/2 garlic powder, parmesan cheese to a 9x13 (or something close to this size) casserole dish. Season with salt + pepper. Stir.
Lay raw chicken on top of mixture. Season with remaining onion powder and garlic powder. Season with salt & pepper. Sprinkle Italian bread crumbs evenly over entire casserole. Cover with foil.
Place in oven for 45 minutes.
Remove from oven. Add sliced mozzarella evenly on top of chicken. Recover with foil. Place in oven for 5 minutes or until cheese is melted.
Remove from oven & enjoy!
