QUICK & EASY WEEK NIGHT DINNER - Shrimp Fried Rice

Fried rice is one of my go to easy recipes during the week. It typically consists of items that I always have stocked in the pantry and it is ready in minutes. Another great feature to this recipe is that it works perfectly with chicken, tofu, or beer. Switch it up or use whatever you have on hand. See more shrimp recipes.

QUICK & EASY Shrimp Fried Rice

HERE IS WHAT YOU NEED: 1 cup boxed white rice (1 bag if you use boil in a bag like me), 1 package of medium frozen shrimp (I buy raw, deveined, with tail on so I have minimal work), 1 red bell pepper, 1 head broccoli, soy sauce, garlic powder, onion powder, olive oil, salt + pepper. Add Sriracha sauce or sweet chili paste to increase spice level. 

WHY THIS WORKS DURING THE WEEK: This recipe does not take a lot of thought or skill. It works with just about any protein including vegetarian options, plus includes the majority of ingredients that I always have on hand. Oh, and it only takes 20 minutes to prepare. 

LET'S GET COOKING: Prepare rice per box instructions and set aside. Sauté bell pepper and broccoli with olive oil until no longer firm. Add to rice mixture. Thaw and remove tails of shrimp. Season with garlic powder, onion powder, salt and pepper. Sauté in skillet for about 5 minutes or until no longer translucent. Add to rice and veggie mixture. Salt + pepper to taste. Add Sriracha or sweet chili paste and stir in mixture (optional).

QUICK & EASY WEEK NIGHT RECIPE - Shrimp Fried Rice

INGREDIENTS:

1 cup boxed white rice

1 lb medium shrimp (thawed with tail removed, sub other fish if desired)

2 tbs olive oil

1 sliced red bell pepper

1 head of broccoli, stems cut

1.5 tsp garlic powder

1.5 tsp onion powder

salt + pepper to taste

Sriracha or sweet chili paste (optional)

INSTRUCTIONS:

Prepare rice per box instructions

Remove tails from shrimp.

In a medium bowl, combine shrimp, onion powder, garlic powder, 1 tbs olive oil, salt + pepper.

Heat 1 tbs olive oil in a skillet over medium heat. Add bell pepper and broccoli. Cook until tender. Add cooked rice. 

Heat 1 tbs olive oil in a skillet over medium heat. Add seasoned shrimp. Cook until no longer translucent.

Add shrimp to rice and veggie mixture. Add Sriracha or sweet chili paste if desired. Salt + pepper to taste.

Plate & Enjoy!
